Good Eats: Chicken Taco Cornbread Pie

How could it not be a win with a name like that?  Pinned it and loved it. Find the recipe here. I tweaked it by subbing a half can of Rotel for the peppers and didn't use all of the muffin mix.  If you use it all it can be cornbread overkill (that's so a band name).  I also added sour cream and taco sauce after the fact.

It made me exceptionally sad that my picky eater hated it but not so sad that I couldn't scarf down two bowls full.  You win some, you lose some.
